Project Life Tuesday - Week 3






Welcome to Project Life Tuesday 2011! If you are new to my blog, welcome! I hope you will stay awhile. I'm Jessica and I am participating in Project Life, a different way to record our lives by taking one photo a day. This was inspired by the fabulous Becky Higgins who has put together a wonderful kit to make this challenge easier.
Don't worry, I'm not leaving traditional scrapbooking behind. This just gives me the opportunity to focus my scrapbooking on trips and things that are important to me right now and not get all bogged down with every birthday, dinner, and holiday that comes along.


Each Tuesday, I will post my pictures/journaling from the previous week. Saturday - Babysitting Jakob.  Juan thoroughly entertained him by playing horsey.  Check out the video here!






Sunday - Typical Sunday afternoon.  Juan curled up on the couch with MY blanket watching Barcelona soccer.  He loves the blanket my friend Janet got me for Christmas!



Monday - Yet another food photo. I am trying more new recipes this week. Tonight it was Superfast Salisbury Steak and Corn and Smoked Mozzerella Mashed Potatoes. YUM!  Best part about it, they are both from Cooking Light!
Recipes:
Ingredients for Salisbury Steak:

3/4 pound ground turkey breast

3/4 pound ground round
1/3 cup dry breadcrumbs
2 large egg whites
Cooking spray
3/4 cup water
3 tablespoons tomato paste
2 tablespoons Madeira wine or dry sherry
1 1/2 teaspoons Worcestershire sauce
1/4 teaspoon freshly ground black pepper
1 (10 1/2-ounce) can condensed French onion soup (such as Campbell's)
Preparation for Salisbury Steak:
Combine first 4 ingredients. Divide meat mixture into 6 equal portions, shaping each into a 1/2-inch-thick patty. Heat a large nonstick skillet coated with cooking spray over medium-high heat. Add patties; cook 6 minutes or until browned, turning after 3 minutes. Remove patties from pan; keep warm. Stir in water and remaining ingredients. Bring to a boil; add patties. Cover, reduce heat, and simmer 10 minutes. Uncover and cook until wine mixture is reduced to 3/4 cup (about 10 minutes).

Ingredients for Corn and Smoked Mozzarella Mashed Potatoes:
Cooking spray


3 cups fresh corn kernels (about 6 ears)
2 1/2 pounds red potatoes, quartered
3/4 cup 2% reduced-fat milk
1/2 cup (2 ounces) shredded smoked mozzarella cheese
3 tablespoons butter, softened
1/4 cup chopped fresh cilantro
1 tablespoon fresh lime juice
3/4 teaspoon salt
1/2 teaspoon freshly ground black pepper


Preparation for Corn and Smoked Mozzarella Mashed Potatoes:
1.  Heat a large nonstick skillet coated with cooking spray over medium-high heat. Add corn; sauté 5 minutes or until lightly browned. Cool.
2.  Place potato in a saucepan, and cover with water. Bring to a boil. Reduce heat; simmer 15 minutes or until tender.
3.  Drain and return potato to pan. Add milk, cheese, and butter; mash to desired consistency. Cook 2 minutes or until thoroughly heated, stirring constantly. Add corn, cilantro, and remaining ingredients, stirring to combine.




Tuesday - This has been a common view for me lately.  I've been scrappin' a lot and shrinking photos is one of my new favorite trends!  This is the scanner at Wal-Mart.  For $0.28 I can print (2) 3x4's or (4) 2x3's.  I have been going to Walmart every couple of days when I start a new layout and figure out what sizes I need for that layout.



Wednesday - Wednesday's are the day that Let's Scrap posts new sketches.  I was so excited this week to see the sketch of the week based on MY CARD!  They had a contest in December and my card was one selected.  They took the winners and are creating a sketch each week in January created from one of the winning projects.  This week was my turn.  I was very honored and super excited to see all of the design team create cards from my card sketch.  How fun!!!!



Thursday - This week my counselor and I had a long discussion about whether my decisions are being made based on my intrinsic values (my wants and needs for a balanced and healthy life) or systemic values (things I feel I should do, or what society and others expect me to do).  It really opened my eyes and I am making a committed effort to think about what each of my decisions are based on every day.  This is the post-it on my computer screen at work.

Friday - My baby niece Ashlyn turned 1 month today.  Isn't she cute?  I'm sad to report that she is having major surgery next Friday to remove a growth the size of a lemon that extends from her ovary to her liver.  We are praying that everything will go smoothly and she will be a healthy little one soon.

Hey Jessica. Wonderful photos this week. My gosh that food looks just delish!!! Hubby looks so cozy!! Your niece is just too dear, so sorry to hear that she is not well, I will pray all goes well for her!!

Your potw i soooo cute!!! Hope your niece's surgery goes well and she doesn't need anymore surgeries! My nephew had 2 surgeries in his first months and he is healthy as can be now. Prayers for her :)
