Project Life Tuesday - Week 11



Welcome to Project Life Tuesday 2011! If you are new to my blog, welcome! I hope you will stay awhile. I'm Jessica and I am participating in Project Life, a different way to record our lives by taking one photo a day. This was inspired by the fabulous Becky Higgins who has put together a wonderful kit to make this challenge easier.
Don't worry, I'm not leaving traditional scrapbooking behind. This just gives me the opportunity to focus my scrapbooking on trips and things that are important to me right now and not get all bogged down with every birthday, dinner, and holiday that comes along.
Each Tuesday, I will post my pictures/journaling from the previous week. Saturday - These are my crazy mutts!  The weather was beautiful outdoors today, so we opened all the windows.  There is no screen on the window to our dining room, so when I walked by and saw both dogs with their entire heads through the window and into the dining area.  Cracked me up!

Sunday - Juan decided to clean the fridge today! It was filthy and had been grossing me out for days.  Thanks hun!

Monday - Yummy and EASY Hominy Chili with Beans!  I've never made chili before.  I found this amazing recipe from Cooking Light that is super quick and super yummy! 

Ingredients
2 teaspoons vegetable oil
2 teaspoons bottled minced garlic
4 teaspoons chili powder
1 teaspoon ground cumin
1 (15.5-ounce) can white hominy, drained
1 (15-ounce) can red beans, drained
1 (14.5-ounce) can no-salt-added diced tomatoes, undrained

1 (14.5-ounce) can no-salt-added stewed tomatoes, undrained and chopped
1/4 cup low-fat sour cream
1/4 cup (1 ounce) shredded reduced-fat sharp cheddar cheese
4 teaspoons minced fresh cilantro


Preparation
Heat oil in a large saucepan over medium heat. Add garlic; sauté 1 minute. Stir in chili powder and next 5 ingredients (chili powder through stewed tomatoes); bring to a boil. Reduce heat; simmer, uncovered, 15 minutes. Spoon 1 1/4 cups chili into each of 4 bowls; top each serving with 1 tablespoon sour cream, 1 tablespoon cheese, and 1 teaspoon cilantro.


Note: If hominy is not available, you can substitute 1 (11-ounce) can vacuum-packed white corn or 1 (15.25-ounce) can whole-kernel corn, drained. Hominy imparts a distinctive flavor remarkabley different from that of corn, so if you use corn, know that the dish will be more like a basic chili with beans.

Wednesday - Today I am 10 weeks pregnant! Pregnancy stats: 219.4 lbs, yes I lost again this week.  I guess that's a good thing, but it worries me that maybe the baby isn't growning.  Less nauseous this week, it just seems to come and go once in awhile now.  I am still tired, but much less.  I even made it bed after 8:30pm almost every night this week!  Our baby is the size of a Kumquat.  Don't know what a kumquat is?  Here's a photo: 


Thursday - Dinner and the theater tonight!  Dinner was fabulous and I had nocchi.  The show was Dividing the Estates and was also pretty good.  It was funny and kept us entertained.


Friday - This is my weekly spot for counseling.  I've been going since Thanksgiving and it has helped me tremendously.  Now that my priorities are back on track we've been focusing on my anxiety about the pregnancy and trying to let the worries go.  It's still a work in progress, LOL!

Those dogs peeking in are too cute! Love the picture of the counseling chair too. I wouldn't have thought to do that.
