Welcome to Project Life 2013! If you are new to my blog, welcome! I hope you will stay a while. I'm Jessica, wife to Juan, mommy to 1 year old Maddie. I am also an electrical engineer by day and I am participating in Project Life, a different way to record our lives by taking one photo a day. This was inspired by the fabulous Becky Higgins who has put together a wonderful kit to make this challenge easier.
I am using the digital kit on shutterfly (hopefully Olive once it has been released), find more info at http://www.beckyhiggins.com/blog. This digital version uses Shutterfly and is SUPER easy to use! See my completed pages for 2012 using the Shutterfly Cobalt kit HERE.
And finally, my POTW (pictures of the week):
Tuesday - Daddy finally introduced Maddie to marbles. They immediately dumped then entire bag onto the floor and Maddie was quite amazed. She kept saying "whoa, whoa, more, more." We will be finding marbles for weeks!
Wednesday - I tried another new recipe from Pinterest tonight from Barefoot Contessa Family Style, Linguine with Shrimp Scampi. It was quite delicious. Maddie wasn't too impressed with the shrimp, but it was light and flavorful with the lemons. It was a pretty easy recipe and one I will be making again.
Ingredients
Vegetable oil
1 tablespoon kosher salt plus 1 1/2 teaspoons
3/4 pound linguine
3 tablespoons unsalted butter
2 1/2 tablespoons good olive oil
1 1/2 tablespoons minced garlic (4 cloves)
1 pound large shrimp (about 16 shrimp), peeled and deveined
1/4 teaspoon freshly ground black pepper
1/3 cup chopped fresh parsley leaves
1/2 lemon, zest grated
1/4 cup freshly squeezed lemon juice (2 lemons)
1/4 lemon, thinly sliced in half-rounds
1/8 teaspoon hot red pepper flakes
Directions
Drizzle some oil in a large pot of boiling salted water, add 1 tablespoon of salt and the linguine, and cook for 7 to 10 minutes, or according to the directions on the package.
Meanwhile, in another large (12-inch), heavy-bottomed pan, melt the butter and olive oil over medium-low heat. Add the garlic. Saute for 1 minute. Be careful, the garlic burns easily! Add the shrimp, 1 1/2 teaspoons of salt, and the pepper and saute until the shrimp have just turned pink, about 5 minutes, stirring often. Remove from the heat, add the parsley, lemon zest, lemon juice, lemon slices, and red pepper flakes. Toss to combine.
When the pasta is done, drain the cooked linguine and then put it back in the pot. Immediately add the shrimp and sauce, toss well, and serve.
Also today, I introduced Maddie to the match game. She really likes the cards, but more to throw all over than to actually match. I think this concept may take a little time.
Thursday - Maddie says, "Cheese" anytime the camera comes out. Tonight she used her Mr. Potato Head parts to create a Miss Maddie Head. She is such a goofy little thing and always keeps us laughing.
Friday - Johnny came over to have Juan co-sign for a car loan tonight and Maddie took the opportunity to play peek-a-boo with the couch cushions. She loves these cushions on the couch, although they usually end up on the floor.
Saturday - We went to dinner at Dave and Siobhan's house. They grilled some amazing fish and even cooked Maddie her own bowl of pasta. Siobhan kept Maddie entertained by pulling out all sorts of costumes and outfits to dress up with. There were even wigs, which Maddie thought were quite funny. Uncle David taught Maddie how to pet a dog only from the front. Mud is a pit bull and they also have a chow. The chow actually snapped at Maddie, so we were all very cautious around the dogs, but Maddie liked meeting them up close and Uncle Dave was keeping a close eye on the dogs. It was a lovely evening with friends. Maddie stayed up until after 10pm when we left and was being a good little girl.

Sunday - Maddie helped Daddy "water" the yard this morning. Good thing we were headed to Nana's to swim. The kiddos spent the morning swimming and then Nana had huge straws for them to drink fruit juice with. Maddie never quite managed to suck hard enough to get the juice up to her mouth, then all three kids ended up blowing bubbles into the bowl instead. It was a pretty funny thing to watch. Nana also had bubbles for everyone and Maddie loves bubbles. We also made homemade ice cream. Maddie thought the ice cream was delicious and asked for more. She liked drinking the ice cream. Then Daddy helped Nana hang a new shelf above her safe and Maddie climbed the ladder after him.
Thanks for visiting!
